Baked Lemon Chicken

I've realized a lot of people have the impression that clean eating is bland, boring and leaves much to be desired. That makes me SO sad because if you know what you're doing in the kitchen, it is quite contrary! Natural flavors like lemon, lime and spices are the trick to creating exciting flavors in your clean dishes. It's just a matter of figuring out the combinations and pairing that are the tastiest for you! 

When we are so used to packaged and processed foods, marinades, flavors etc. our tastebuds actually CHANGE and adjust to all of that yucky stuff...so they learn to expect that every time we taste something! I find when I do my clean eating challenges and cut out all that stuff, your body will learn to love natural flavors again and FEELS so much better than when you pump sodium and additives through your body.

This recipe is adapted from Ina Garten's and it is one of my go to's for a tangy, flavorful chicken dish that can be paired with just about everything! (You can find the original recipe here.)

I recommend DOUBLING this recipe because chicken is so versatile and you can always use leftovers to create another dish (like tacos or soup.) 

INGREDIENTS:

  • 1/4 cup good olive oil
  • 3 tablespoons minced garlic (9 cloves)
  • 1/3 cup dry white wine
  • 1 tablespoon grated lemon zest (2 lemons)
  • 2 tablespoons freshly squeezed lemon juice
  • 1 1/2 teaspoons dried oregano
  • 1 teaspoon minced fresh thyme leaves
  • Kosher salt and freshly ground black pepper
  • 4 boneless chicken breasts, skin on (6 to 8 ounces each)
  • 1 lemon
  • 1 onion

Lightly toast the garlic in the olive oil on medium-low heat (DO NOT burn the garlic!!). Add white wine, lemon zest, lemon juice, oregano, thyme, salt. Combine ingredients and pour it all into the bottom of the baking dish (it will be a little bed of heaven for the chicken!)

Rub salt and pepper into both sides of the chicken breast and spread them out into the dish. Cut up lemons and onion into wedges and tuck them in between the chicken breasts. Baste the chicken breasts with the sauce and place in the oven to bake at 400 degrees for 30-40 minutes. Set a timer for 20 minutes in and pull out to baste the chicken with the sauce one more time. 

This recipe pairs great with a quinoa side dish and roasted veggies! Enjoy!
