Soups are always my go-to recipes in the winter because I’m always freezing my buns off and they’re so easy to throw together! I created this sweet potato and veg soup recipe last week and loved the yummy flavor combo. I’ve been on a Rosemary kick recently!
- 1 Medium Onion
- 3 Medium Tomatos
- 1 Large Sweet Potato
- 1 tablespoon Rosemary
- 2 15-oz cans Chicken Broth (or veggie)
- 1 Tbs minced Garlic
- 1 Tbs EVOO
- Salt and Pepper
Chop & sauté the onion and sweet potato in the EVOO until the onion is translucent. Add in some S&P, rosemary and garlic and lightly toast on medium for 2 minutes. Add in the tomatoes and mix well before adding in the chicken broth. Bring to a boil and reduce to a low simmer and cook for another 20 minutes.
